Milk Type: Cow’s milk (unpasteurised)— milk from Montbéliarde cows primarily, sometimes French Simmental allowed under PDO rules. 
Pasteurisation: No (PDO Comté is traditionally raw milk) 
Pregnancy Safe: No under general food safety advice for raw milk cheeses
Cheese Type: Hard cheese, aged, alpine / mountain style 
Rind: Dry dusty / natural rind protecting crumbly paste. 
Flavour Notes: Buttery, hazelnut, caramel, deep roasted notes; intense flavour with crystalline texture giving slight crunch
